Recipe Ingredients for Sue's Cardamon Muffins with whole yoghurt yummy

1 medium egg
200 g whole natural yoghurt (keep 1 tbsp back for the icing)
85 g caster sugar
225 g wholemeal self raising flour
1/4 tsp baking powder
1/2 tsp bicarbonate of soda
1 pinch of salt
2 tsp cardamon, ground seeds
60 g icing sugar, sifted
15 g natural whole yoghurt

Recipe Directions for Sue's Cardamon Muffins with whole yoghurt yummy

  1. Preheat oven to 180C/350F/Gas 4.

  2. Grease 12 x muffin tin or use paper muffin cases. Whisk egg in mixing bowl, add yoghurt, reserving a tablespoon to make the icing later.

  3. Whisk together.

  4. Add sifted flour, baking powder and bicarbonate of soda, salt and ground cardamon seeds by folding, taking care not to over-mix.

  5. Spoon into muffin cases and cook in oven for 18-20 minutes or until skewer inserted in centre comes out clean.

  6. Cool on wire rack for 10 minutes.

  7. When muffins have cooled, prepare icing by mixing icing sugar and yoghurt, adding a drop of water if it is too stiff.

  8. Spread over top of muffins.

  9. Alternative: Rachel suggests you can make a whole cake by using 8 inch round cake tin, greased and lined, and baking for 35 minutes until skewer inserted in centre comes out clean.
