Recipe Ingredients for Sue's Cannellini Beans and Chorizo yummy

235 g tinned cannellini beans
3/4 tbsp extra virgin olive oil
1 onion, minced
4 cloves garlic, chopped
40 g chorizo, diced
1/2 tsp dried chili flakes
1 fresh chili pepper
120 g dry sherry
390 g chopped tomatoes
1 tbsp fresh parsley, chopped

Recipe Directions for Sue's Cannellini Beans and Chorizo yummy

  1. Saute chopped chili pepper and chili flakes in hot olive oil to release flavours, then add minced onion and saute until softened.

  2. Add minced garlic.

  3. Add diced chorizo and stir in.

  4. Add sherry and stir in until blended.

  5. Add chopped tomatoes, bring to boil, and add half the chopped fresh parsley.

  6. Simmer with lid partly on for 45 minutes to allow the flavours to blend fully - during the last 5-10 minutes, add the beans and stir in.

  7. Sprinkle with remaining fresh parsley and serve with couscous.
