Pancake mix for two, making 5-6 small pancakes. Double the quantities to make 10-12 pancakes.

Recipe Ingredients for Sue's Buckwheat Pancakes yummy

1/2 teaspoon white wine vinegar
125 ml milk
1 tsp extra virgin olive oil
20 g brandy
65 g buckwheat flour
1 egg
2 tsp butter or sunflower oil
1 pinch salt

Recipe Directions for Sue's Buckwheat Pancakes yummy

  1. Add the vinegar to the milk and leave for 15 minutes until it curdles.

  2. Tip milk in a bowl and add the oil, brandy, salt and flour. Mix using fork, hand whisk or electric whisk.

  3. Add the eggs, one at a time, making sure they are worked in thoroughly. Be sure to mix the batter again as you cook the pancakes.

  4. Pour 2-3 tablespoons of batter onto a griddle or a non-stick pan which has been rubbed with butter or oil. Turn over once browned and cook the second side.

  5. Serve with freshly squeezed lemon juice and a sprinkling of sugar, or with honey and yoghurt, or jam, or anything you like.
