Recipe Ingredients for Sue's Broccoli Pasta with Anchovies yummy

120 g whole wheat pasta
300 g broccoli, crown, cut into small florets
1 tbsp extra virgin olive oil
70 g fresh breadcrumbs
2 cloves garlic, crushed
20 g fresh flat-leaf parsley, chopped
50 g Anchovy Fillets in Olive Oil
1 chili pepper, dried, crushed
1 lemon

Recipe Directions for Sue's Broccoli Pasta with Anchovies yummy

  1. Cut florets from crown of fresh broccoli.

  2. Cook the pasta in a pan of boiling unsalted water according to pack directions. Add the broccoli 5 minutes before the end of the cooking time. Drain, the pasta water into a separate bowl or container, return broccoli to the pan and cover to keep warm. Cover the pasta water to keep warm.

  3. To make the pangrattato, heat half tablespoon of the olive oil in a large frying pan then add the breadcrumbs, half the garlic and half the parsley.

  4. Cook for 2-3 minutes on a medium heat until crisp and golden. Season with freshly ground black pepper then tip onto a plate and wipe out the pan.

  5. Drain the anchovies and place some of the the anchovy oil from the tin, plus the remaining olive oil, in the pangrattato pan.

  6. Add the remaining garlic, cook for 1 minute.

  7. Add the anchovy fillets, cook for 2-3 minutes until the anchovies begin to soften and cook down.

  8. Add the chilli and remaining parsley then stir in the lemon juice.

  9. Tip over the drained pasta and broccoli, and mix well. Use a spoonful or so of the pasta water to add to the mixture and keep it soft, as required.

  10. Divide the pasta mixture between 2 bowls, sprinkle with the crispy pangrattato and serve immediately.
