Recipe Ingredients for Sue's Beef Ragu alla Bolognese Sauce yummy

1 tbsp extra virgin olive oil
1 rasher back bacon, smoked
350 g lean minced beef
1 small red onion - finely diced
2 garlic cloves - finely diced
1 large carrot - finely diced
65 g celery - 1 large stick, finely diced
50 g mushrooms - chopped
1 cube Oxo beef stock
1/2 pint of boiling water - mixed with beef cube
20 g dried porcini mushrooms (soaked in 1 pint of boiling water for half an hour before use)
400 g plum tomatoes tinned
200 g passata sauce
1 glass of red wine
1/2 tsp oregano
1/8 g salt
3/4 tsp sugar (to counterbalance acidity of tomatoes)
1/2 tsp cocoa powder unsweetened
1/4 tsp mustard powder
10 g parmesan, roughly grated

Recipe Directions for Sue's Beef Ragu alla Bolognese Sauce yummy

  1. Soak dried mushrooms in boiling water for 30 minutes.

  2. Heat the olive oil over a medium heat. Add the bacon and mince and cook until browned.

  3. Add the onion, garlic fry for 3 minutes.

  4. Add the carrots and celery.

  5. Drain the Porcini Mushrooms (save your water). Dice and add to the pan along with fresh mushrooms.

  6. Add the tin tomatoes and passata and oregano, leave for 2 minutes.

  7. Add the beef stock, glass of wine and half of your porcini water. Bring to the boil and simmer on a low heat for 2-4 hours, stirring occasionally until you have desired consistency. Add seasoning, sugar, cocoa powder, salt to taste.

  8. Cook pasta as packet instructions.

  9. Mix pasta with ragu in serving bowl, top with grated parmesan and serve hot.
