Can make this for 2 servings (a meal for 2), then make a second meal for 2 the next day by serving the third portion heated up with nice quality noodles for a quick leftovers meal.

Recipe Ingredients for Sue's Beef Hash yummy

350 g good-quality lean minced beef
1/2 tbsp extra virgin olive oil
1 tsp fresh thyme (2 sprigs)
1 red onion
2 carrots
200 g celery (3 large sticks)
3 tbsp fresh rosemary (a few sprigs)
4 cloves of garlic
4 tablespoons Worcestershire sauce
1/2 cup fresh parsley

Recipe Directions for Sue's Beef Hash yummy

  1. Saute the minced beef in olive oil and thyme until brown.

  2. Peel and halve the onion. Wash and trim the carrots and celery, then slice all of them in the food processor and set aside.

  3. When the mince is golden, pick the rosemary leaves and sprinkle into the pan.

  4. Crush in the 4 unpeeled cloves of garlic and add the Worcestershire sauce. Stir well, cook until nicely glazed.

  5. Add the sliced veg and stir again. Reduce the heat to medium and remember to toss often.

  6. When ready, finely slice the fresh parsley and sprinkle on top - you can reserve some parsley leaves for garnishing other parts of the meal.

  7. Serve with baked potato and salad or fresh vegetables.
