Lighter, lower fat version. If you prefer a sweeter version, add more dulce de leche spread/filling (a caramel spread made from skimmed milk). If you cannot get this, use maple syrup, honey, caramel spread, or nutella.

Recipe Ingredients for Sue's Banoffi Pie yummy

200 g stem ginger oat biscuits
40 g flora original margarine
3 bananas
3 tbsp dulce de leche
500 g Yeo valley natural whole yoghurt
2 tbsp dark brown sugar, muscovado
1 tsp instant coffee

Recipe Directions for Sue's Banoffi Pie yummy

  1. Preheat oven to 180C or fan oven 160C.

  2. Crunch biscuits in food processor, add margarine and whizz to form pie base. Or crunch up in a bowl with a pestle.

  3. Press pie base into greased pie dish.

  4. Cook pie base for about 10 minutes, remove from oven and leave to cool on wire rack.

  5. When pie base is cool and 15 minutes before serving, spread the dulce de leche filling thinly over the pie base.

  6. Slice bananas and arrange on top.

  7. Spread yoghurt over the bananas, covering them.

  8. Sprinkle muscovado sugar on the yoghurt, breaking up any big lumps first.

  9. Sprinkle instant coffee powder/granules on top.

  10. Refridgerate for 10-15 minutes to allow sugar and coffee to melt and sink into the yoghurt, then serve straight away.
