Small version for 2. Lighter version, best eaten straight away while pie base is still a little warm and slightly crispy and before the toppings melt into the base. Not as sweet and rich as conventional banoffi pie but much better on the calories! Best to use good quality ingredients as listed, quality ginger biscuits, a pure creamy yoghurt, dulce de leche caramel spread, and a lovely soft banana

Recipe Ingredients for Sue's Banoffi Pie for 2 yummy

45 g Nairns stem ginger oat biscuits
10 g flora margarine
125 g Yeo Valley whole milk plain yoghurt
1 1/2 tbsp dulce de leche
1 banana, ripe, sliced
1/2 tsp instant coffee
1/2 tsp unsweetened cocoa powder

Recipe Directions for Sue's Banoffi Pie for 2 yummy

  1. Preheat oven to 180C or fan oven 160C.

  2. Crunch biscuits in food processor, add margarine and whizz to form pie base. Or crunch in a large bowl using a pestle or the bottom of a clean glass bottle/jar and mix in the margarine until you have soft crumb consistency.

  3. Press pie base into individual heatproof pie dishes (large ramekins, individual pudding bowls).

  4. Cook pie base for about 10 minutes, remove from oven and leave to cool on wire rack for 5 minutes.

  5. Spoon the dulce de leche spread onto the pie base.

  6. Slice bananas thinly and arrange on top, press down so there are no big gaps.

  7. Spread yoghurt on top of the bananas.

  8. Sprinkle instant coffee granules and cocoa powder on top.

  9. Serve straight away, while pie crust is warm and yoghurt is cool.
