Recipe Ingredients for Succotash Soup

5 acorn squash, baked whole
5 large baking potatoes, baked. (Let cool and then dice)
2 large onions, chunked
3 cups almond milk
2 1/2 tbsp bouillon, vegetable
6 cups water
1/3 cup white grape juice (or chardonnay)
1 pinch salt
1 1/2 cups black beans, dry
1 1/2 cups garbanzo beans, dry

Recipe Directions for Succotash Soup

  1. Soak and cook beans the day before.

  2. Bake potatoes, let cool, dice

  3. Bake squash (whole). Let cool slightly before cutting open and scooping seeds out of cooked squash, discard peel and cut into chunks.

  4. In a large pot, combine milk, water, bouillon, salt, and onion. Bring to a boil and cook until onions are tender.

  5. Add cooked beans, squash, potato, and juice.

  6. Heat Through.
