Recipe Ingredients for Succotash

1 cup, cubes Eggplant
0.5 cup Pepper, Banana
2 cup Lima Beans, Large, Mature Seeds
1 oz Hot Banana Pepper Rings
1 tsp Garlic Powder
4 serving Salt Substitute
1 dash Pepper, Black

Recipe Directions for Succotash

  1. Thoroughly rinse the eggplant, peppers and lima beans. Add lima beans to a pot and cover with water. Put over medium-high heat and bring to boil. Boil beans for 5 minutes.

  2. Meanwhile, clean remaining vegetables by removing any seeds and/or stems. Chop eggplant and peppers. Spray a pan with cooking spray and add eggplant and peppers to pan over medium-high heat. Sautee until veggies begin to soften.

  3. After beans have boiled for 5 minutes, drain and rinse. Then return to pot and cover with fresh water. Bring to a boil and cook for 15 minutes.

  4. Once eggplant and peppers have begun to soften, reduce heat to medium low. Add liquid from the banana pepper rings jar. Be careful of the steam. Season with garlic powder, salt and pepper. Stir occasionally.

  5. Once lima beans have finished cooking, drain and rinse again. Place cooked beans in pan with eggplant and peppers. Stir until well blended.

  6. Serving size is about 1/2 cup.
