Recipe Ingredients for succotash

30 ounce diced tomatoes
10 ounce crushed tomatoes
1 pound okra
3/4 cup vegetable broth
1 cup chopped onion
1 teaspoon olive oil
10 ounce corn
20 ounce lima beans
1 clove Garlic

Recipe Directions for succotash

  1. In large pot sauté garlic in olive oil,add onion. Add all tomatoes and vegatable stock to pot. Bring to simmer add drained can of corn, lima beans and okra. Bring to a simmer, salt and pepper to taste.

  2. *For low sodium, add low sodium vegetables

  3. For spice add hot sauce

  4. *use fresh vegetables instead of can if you have them on hand, extend cooking time
