Recipe Ingredients for Stuffing with Celery, mushrooms and Onions

28 ounces stuffing (2 bags pepperidge herb seasoned stuffing)
16 tablespoons butter
5 celery stalks (chopped)
5 medium onions (chopped)
6 ounces mushrooms (sliced)
1/2 cup dried cranberries
2 ounces red wine
1 teaspoon salt
32 ounces chicken broth

Recipe Directions for Stuffing with Celery, mushrooms and Onions

  1. Preheat oven to 375 degrees.

  2. cook celery and onions in 2 tablespoons butter under medium high heat on a large saucepan. Add mushrooms. Add salt. Cook until mushrooms are tender.

  3. Add the cooked vegetables to a large pot and pour half of one of the stuffing bags. Mix them in.

  4. Add 4 tablespoons butter and pour the remaining half of the stuffing mix. Blend well.

  5. Pour about a cup of the chicken broth and mix well.

  6. Add stuffing from the second bag and mix well. Add more broth. Add 1 ounce of red wine. Add 2 tablespoons of butter and continue mixing. Repeat this process until all the stuffing is in the pot. Make sure to not let it burn, bring the heat down to medium.

  7. Add the remaining butter and broth. Mix well. Mixture must be wet and no dry crumbs should be visible.

  8. Remove from heat.

  9. Pour stuffing onto a baking dish. Pour the remaining 1 ounce of red wine on top.

  10. Bake for 20 to 30 minutes
