Our neighborhood is plagued by neighbors who plant too much zuchinni and squash in the fall. As such, it gets dropped off onto other neighbor's laps. Here's a recipe to deal with such a situation.

Recipe Ingredients for Stuffed Zuchinni

4 serving Winter Squash
1 cup fat free sour cream
1 oz lean ground beef
1/4 cup cheddar cheese

Recipe Directions for Stuffed Zuchinni

  1. Cut zuchinni into four sections

  2. Clean out seeds

  3. Bake for 1 hour at 350.

  4. Mix beef and sour cream, and spoon into centers of zuchinni, sprinkle cheddar cheese on top. Put back into oven for 5 minutes at 350.
