Recipe Ingredients for Stuffed Zuccini

1/2 cup brown rice
3 medium zuccini
1 egg
1 1/2 cup 1% milk
1 onion
1 tbs oil
1/4 cup parmesan cheese
10 oz ground turkey
3 cloves garlic
1 tsp nutmeg

Recipe Directions for Stuffed Zuccini

  1. steam zuccini and set aside to cool

  2. cook rice and set aside

  3. chop garlic and cook in lightly oiled pan, add ground turkey and cook until no longer pink

  4. scoop insides from zuccini and place in bowl, add rice and cooked turkey

  5. Make white sauce: cook chopped onions in oil, wisk in milk, egg, half of the parmesan cheese, nutmeg, and salt to taste; cook until thickened.

  6. add a small amount of white sauce to zuccini filling, and then fill all of the empty zuccinis

  7. put the rest of the cheese on top and cook in hot oven for 20 minutes
