Recipe Ingredients for Stuffed Zucchini

8 medium Squash, Summer, Zucchini, Includes Skin
6 plum tomato Tomatoes, Red, Ripe
3 medium (2-1/2" dia) Onions
1 cup Bread Crumbs, Dry, Grated, Plain
0.3 cup Parsley
0.5 cup Parmesan, Grated Cheese
2 tbsp Extra Virgin Olive Oil

Recipe Directions for Stuffed Zucchini

Slice zucchini lengthwise and scoop out center and finely chop, Dice tomatoes, chop parsley, Saute onions until brown. add zucchini , tomatoes, parsley, cheese, salt and pepper to taste. Add bread crumbs and cheese. fill zucchini and bake 350 until crispy tender.
