Stuffed Zucchini Recipe

Each serving is half a stuffed Zucchini. Don't put parmesan on until near the end of cooking.

Recipe Ingredients for Stuffed Zucchini

4 medium Squash, Summer, Zucchini, Includes Skin
1 cup, chopped Peppers, Sweet, Red
8 oz Peppers, Sweet, Yellow
1 cup, chopped Peppers, Sweet, Green
1 cup, diced Celery
4 tbsp chopped Onions
4 tbsp Parmesan, Grated Cheese
2 oz Bread Crumbs, Dry, Grated, Plain

Recipe Directions for Stuffed Zucchini

Slice zucchini in halves lengthwise. Scoop out seeds and meat leaving about 1/2 inch shell with skin on. In food processor or blender, process Zucchini guts, peppers, celery and onions until well chopped. In a bowl mix in bread crumbs. Place an even amount of mixture into each zucchini shell. Bake in oven for about 15 minutes at 350. sprinkle with parmesan cheese and bake for another 5-10 minutes until cheese is golden. Serves 8. Per serving: 1 carb
