Zucchini with vegetarian stuffing

Recipe Ingredients for Stuffed zucchini

1095 grams zucchini
174 grams carrots
125 grams red sweet pepper
1 clove garlic
50 grams spring onion
93 grams eggplant
4 eggs
2 tbsp sunflower oil
100 grams feta cheese
100 grams creme fraiche

Recipe Directions for Stuffed zucchini

  1. Cut each zucchini in two halves along their length. Take a tea spoon and start digging out the inside part of each zucchini, so that at the end you have made something like a boat with thin sides from each one of the pieces.

  2. Keep the removed inside part of the zucchini for later.

  3. Chop the carrot, the onion, the red pepper, the garlic and the eggplant and fry everything in the oil. Add salt, black pepper and chili according to your taste. Chop also the removed inside part of the zucchini and add it to the rest of the vegetables. Add 100 ml of water and let it simmer for a while until the water has almost evaporated. Boil the eggs, chop them and add them to the vegetables together with the creme fraiche. Mix everything well.

  4. Put the zucchini halves in the baking pot next to each other, so that they fit nicely. Cut the feta cheese in thin slices and cover with them the bottom of each zucchini boat. Then start filling each half with with the vegetable mixture. If there is something left from the mixture, you can spread it in between the zucchini halves. Add some 100 ml of water into the baking pot and bake it in the oven at 250 degrees for about 40 minutes. Enjoy!
