Zucchini stuffed with bulgur and vegetables

Recipe Ingredients for Stuffed Zucchini

1 zucchini
1 tsp olive oil
1/4 cup green pepper, chopped
1/4 cup carrots, chopped
1/4 cup onion, chopped
1/4 cup reduced fat feta cheese
1/3 cup bulgur wheat
1 cup chicken broth

Recipe Directions for Stuffed Zucchini

  1. Preheat oven to 425 degrees

  2. Slice one medium size zucchini, lenthwise

  3. Hollow out each half of the zucchini and save the pulp

  4. Brush hollowed out zucchini with olive oil and sprinkle with salt

  5. Place zucchini on a baking sheet and put in oven on 425 for 20 minutes or until softened.

  6. Boil the bulgur wheat in the chicken broth until fully cooked and set aside.

  7. Meanwhile, finely chop the zucchini pulp

  8. Heat a frying pan with 1 tbsp of olive oil and add the zucchini pulp, green pepper, carrots, and onion

  9. Fry the mixture until all of the vegetables are softened and lightly browned.

  10. Add the cooked bulgur to the pan with the vegetables.

  11. Add the feta and stir until melted.

  12. Stuff the 2 halfs of the zucchini with the vegetable and bulgur mixture and enjoy!
