Stuffed Zucchini Recipe

Zucchini halves stuffed with Italian breadcrumbs and baby spinach.

Recipe Ingredients for Stuffed Zucchini

2 medium zucchini
2 tbsp country crock light spread
1 clove garlic
2 c italian breadcrumbs
2/3 c spinach
1/2 c mozzarella

Recipe Directions for Stuffed Zucchini

Boil zucchini whole for eight minutes. Cut in half and core. Chop pulp. Heat butter in a skillet. Then, sautee garlic and onions for one minute. Stir in zucchini pulp and spinach. Heat intil spinach is wilted. Add breadcrumbs, cheese (reserve some for topping), and seasonings. Stuff zucchini with mixture and place on a greased baking dish. Bake at 350 for 20 minutes, or until zucchini is tender.
