Stuffed Zucchini Recipe

Zucchini stuffed with paremsan cheese and seasoned bread crumbs.

Recipe Ingredients for Stuffed Zucchini

3 medium zucchini
3 green onions
2 cloves garlic, chopped
2 tbsp butter
1 tbsp olive oil
1/4 cup seasoned bread crumbs
1/4 cup parmesan cheese
2 tbsp parsley, chopped
1/4 cup shredded mozzarella cheese
1/4 tsp salt
1/4 tsp pepper

Recipe Directions for Stuffed Zucchini

  1. Wash and cut zucchini lengthwise and then in half crosswise.

  2. With a small spoon scoop out pulp and place in a small bowl. Set aside.

  3. In a steamer, steam zucchini for about 10 minutes until slightly tender.

  4. In a medium size saucepan melt butter with oil and sautee zucchini pulp, ononsand garlic for about 3 minutes.

  5. Remove from heat and stir in breadcrumbs, parmesan cheese and parsley.

  6. Preheat oven to 350 degrees F.

  7. Stuff the zucchini mixture into the zucchini quarters and top with mozzarella.Place them in a baking dish and bake uncovered for 15 minutes until cheese is melted and browned.
