Stuffed Zucchini Recipe

Recipe Ingredients for Stuffed Zucchini

3 medium zucchini
2 tbsp butter
1 cup fresh mushrooms, chopped
2 tbsp flour
1/4 tsp dried oregano, crushed
1 cup (4 oz.) Monterey Jack cheese, shredded
2 tbsp pimento, chopped
1/4 cup Parmesan, grated

Recipe Directions for Stuffed Zucchini

  1. Cook whole zucchini in boiling salted water about 10 minutes, or until tender; drain.

  2. Cut in half lengthwise. Scoop out center leaving a 1/4 inch shell; set aside.

  3. Melt butter in a large skillet. Saute mushrooms about 3 minutes or until tender. Stir in flour and oregano; remove from heat. Stir in cheese, pimento, and zucchini.

  4. Fill zucchini shells; sprinkle with Parmesan. Broil or place on grill, 3-5 minutes or until cheese is bubbly.
