Zucchini stuffed with ground beef and veggies

Recipe Ingredients for Stuffed zucchini

2 med zucchini
1/4 cup onion, diced
4 cloves garlic
1 egg
1 cup tomato, diced
1 cup spinach, chopped
1/2 cup mushrooms, sliced
1/4 cup green pepper, diced
1/4 cup tomato juice
3/4 cup cheddar, shredded
2/3 pound lean ground beef

Recipe Directions for Stuffed zucchini

  1. Mix together all ingredients except zucchini and cheese, season to taste

  2. Place scooped out zucchini in cassarole dish

  3. Fill with mixture

  4. Bake 350 for 45 minutes

  5. Sprinckle cheese over and broil until cheese bubbles
