Zucchini stuffed with ground turkey and veggies

Recipe Ingredients for Stuffed Zucchini

1 large zucchini, split lengthwise, pulp removed
8 oz ground turkey
1/2 large carrot, finely diced
1/2 bell pepper, finely diced
1/2 medium onion, finely diced
1 tablespoon garlic, minced
12 oz. V-8 juice, spicy
1/3 cup chives, fresh, minced
1/3 cup cilantro, fresh, chopped
6 oz. cheddar cheese, shredded

Recipe Directions for Stuffed Zucchini

  1. Cut zucchini lengthwise and remove pulp. Put in dish and bake in 350 oven for 15 minutes.

  2. Brown the turkey meat in a skillet. Remove, leave juice in skillet, set aside.

  3. Saute the carrots, pepper, onion and garlic in turkey juice until soft.

  4. Add turkey, V-8, chives, and cilantro to the skillet and bring to boil. Turn down heat and let simmer for about 10 minutes.

  5. Fill zucchini with turkey/veggie mixture. Top with cheddar cheese.

  6. Bake for 10 minutes, then turn the broiler on until the cheese is melted and slightly browned.
