Recipe Ingredients for Stuffed Zucchini

1 pound chicken breast, ground
1 cup salsa
4 oz part-skim mozzarella cheese, or cheddar
4 small zucchini

Recipe Directions for Stuffed Zucchini

  1. Heat a large skillet over medium heat and spray with non-stick spray.

  2. Add the ground chicken breast and saute until fully cooked and crumbled.

  3. Add the salsa to the cooked ground chicken, and cook for a few extra minutes to allow any extra water to evaporate.

  4. Slice the zucchinis in half, and scoop out the seeds.

  5. Place them scooped out side up in a baking dish, and fill with the ground chicken mixture.

  6. Sprinkle each zucchini half with 2 T. reduced fat cheese, cover with foil and bake in a 350 degree oven until the zucchinis are cooked through. Remove the foil and cook for a few minutes more until the cheese is slightly browned.

  7. Serve two zucchini halves per person.
