Recipe Ingredients for Stuffed Zucchini

4 large zucchini - (6 to 7 inches; based on 323 gm each)
1/2 pound Foster Farms turkey italian sausage
1/8 cup onion, chopped
1 clove garlic - minced
1 teaspoon dried oregano
1 medium tomato - seeded/diced
2/3 cup cooked wild rice
3 ounces Sargento Reduced Fat Italian, shredded cheese-divided

Recipe Directions for Stuffed Zucchini

  1. Cut each zucchini in half lengthwise.

  2. Scoop out and discard seeds from zucchini, saving edable inner flesh.

  3. Place in container with small amount water; Microwave until zucchini are crisp tender.

  4. Remove zucchini and drain water.

  5. Cook sausage, onion and garlic until sausage is browned; drain fat.

  6. Add zucchini flesh and cook until crunchy tender. Add oregano, wild rice and tomato.

  7. Cook and stir until heated through. Remove from heat and stir in 2/3 cup cheese; set aside.

  8. Divide the sausage mixture among zucchini shells. Place into a sprayed 13-inch x 9-inch x 2-inch baking pan. Sprinkle with remaining cheese. Bake uncovered, at 375' for 12-15 minutes or until heated through. Yield 4 to 6 servings.
