Stuffed Zucchini Recipe

Makes 6 servings



Zucchini stuffed with mushrooms and cheese.

Recipe Ingredients for Stuffed Zucchini

3 medium zucchini
2 T butter
1 c mushrooms
2 T flour
1/4 t oregano
4 oz chedder cheese
1/4 c parmesan cheese

Recipe Directions for Stuffed Zucchini

  1. Cook whole in boiling water for 10 minutes or until tender.

  2. Cut in half lengthwise.

  3. Scoop out centers leaving 1/4 " shells.

  4. Chop center portion and set aside.

  5. Saute mushrooms in butter.

  6. Stir in flour and oregano. Remove from heat.

  7. Stir in Monteray Jack cheese and reserved zucchini. Heat mixture.

  8. Fill zucchini shells and sprinkle with parmesan cheese.

  9. Broil 3 to 5 minutes.

  10. May be prepared up to 4 hours ahead, refrigerated and then broiled 5 to 7 minutes.
