Stuffed Zucchini Recipe

Very large garden zucchini stuffed with a flavorful mix of ingredients

Recipe Ingredients for Stuffed Zucchini

1 large zucchini
1/2 green pepper, chopped
1 medium onion, chopped
2 cups carrot, shredded
1 medium tomato, chopped
1/2 cup quinoa, uncooked
8 oz. (lean) pork sausage
1 cup (2%)cheese, shredded
1 large egg
1/2 cup (vigo) Italian bread crumbs
2 tbsp. wheat germ
1/2 tsp. black pepper
1 tsp. oregano

Recipe Directions for Stuffed Zucchini

  1. Soak 1/2 cup quinoa in 1 cup hot water (15 min.)

  2. Cut zucchini in half lengthwise and scoop out inside leaving 1/2 inch shell.

  3. Discard seeds and chop remaining pulp.

  4. Place zucchine halves in a casserole or pan large enough to hold them. Poor 1-2 Cup water in bottom of pan and cover with foil. Steam Zucchini halves in 350 degree oven for about 15 minutes until tender, but not mushy.

  5. Drain off water from zucchini pan.

  6. Cook sausage, drain

  7. Add chopped onions and carrots to pan and saute until tender.

  8. Add zucchini pulp and peppers, cook for a few more minutes.

  9. Place cooked mixture in a seperate bowl.

  10. Stir in quinoa, tomato, cheese and bread crumbs.

  11. Beat egg lightly and mix into rest of ingredients.

  12. Sprinkle bottom of drained zucchini with wheat germ.

  13. Stuff zucchini with prepared filling

  14. Bake at 350 for 30 minutes.

  15. Serve with tomato sauce and crusty bread.
