Rice stuffed zucchini with olive, cheddar cheese, and tomato paste topping

Recipe Ingredients for Stuffed Zucchini

400 grams Squash, Summer, Zucchini, Includes Skin
4 tbsp Tomato Paste
60 grams Rice, Brown, Medium-grain, Cooked
1 stuffed olives
30 grams shredded cheddar cheese

Recipe Directions for Stuffed Zucchini

  1. half and core large zucchini along it's length. Place core into saucepan that you will use to boil rice.

  2. boil half cup brown rice along with zucchni core.

  3. stuff zucchini with rice/core mixture

  4. top with tomato paste and shredded cheddar cheese and garnish with stuffed olives.

  5. bake in medium oven

  6. makes 2 halves
