Recipe Ingredients for Stuffed Zucchini

2 zucchini
1/2 medium onion
1 serving Sweet Italian Chicken Sausage (Trader Joe's)
1 small carrot
1/4 c parmesan
1/3 c rice

Recipe Directions for Stuffed Zucchini

  1. Preheat oven to 350 F.

  2. Wash the zucchinis and cut them in half lengthwise. Then, using a spoon, scoop out the flesh and set it aside.

  3. Place the zucchinis into a baking pan. Sprinkle with salt and drizzle with some olive oil.Bake for 10 minutes.

  4. Saute the diced onion and sausage (cut into small pieces). After 5 minutes, add the reserved zucchini and diced carrot. Season it with 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, and a dash of worcestorshire sauce. Cook for about 10 minutes. Stir in the rice and some of the cheese.

  5. Fill the zucchini shells, add the remaining cheese, and bake for 20 minutes.
