This delicious stuffed zucchini recipe can be served as either a sidedish or a maindish.

Recipe Ingredients for Stuffed Zucchini

2 large Zucchini
2 medium Tomatoes
1/4 cup Shredded Cheese
1 small Onion
1/4 tsp Black Pepper
2 serving Minced Garlic
1 tsp Italian Seasoning
2 Jalapeno Peppers, minced
4 medium Green Onions
26 grams Wheat Germ

Recipe Directions for Stuffed Zucchini

  1. Preheat your oven to 375 (200C).

  2. Give the zucchini a good scrub. Slice them in half length-ways. You can trim the ends if you like. I never do, I kinda like how rustic it makes them look.

  3. Spoon out the inside of the zucchini. Just take it out (leave about 1/2 an inch in) until you end up with boat like shells.

  4. Now give the zucchini pulp a good chop, also chop a small onion and the tomatos while you?re at it.

  5. Sautee the onion in oil or butter or cooking spray. When they?re almost done add the garlic and jalapeno, cook a minute more; transfer them to a big bowl. Now (in no particular order), add the Italian seasoning, pepper, the zucchini pulp, cheese and the tomatos into the bowl and mix together.

  6. Spray a baking dish with cooking spray and put the zucchini boats in. Grab a spoon and fill the shells with the mix.

  7. Put them in a preheated oven, give them about 20 minutes and then turn on the broiler until the top is golden brown.
