Zucchini and green peppers stuffed with lean ground beef and rice mixture

Recipe Ingredients for Stuffed Zucchini and Peppers

500 grams Beef, Ground, 95% Lean Meat / 5% Fat, Crumbles
4 medium Squash, Summer, Zucchini, Includes Skin
4 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green
2 small Onions
70 grams Rice, White, Medium-grain, Cooked
1 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
3 tbsp Sunflower, Linoleic, (Hydrogenated) Oil
1 cup Tomato Juice
1/4 tsp Sea Salt
1 dash Pepper, Black
1/2 cup Parsley
5 sprigs Dill Weed, Fresh

Recipe Directions for Stuffed Zucchini and Peppers

  1. Peel 4 zucchini, cut them in halves and hollow out each half. Clean peppers and remove the top and seeds inside. Stuff each with a mixture of rice, onions and lean ground beef. Cap with tomato slices and bake in oven until done.

  2. 1 zucchini/1 pepper = 1 serving
