Recipe Ingredients for Stuffed Zucchini with Mushrooms

1/2 cup mushrooms, sliced
2 cups warm water
6 medium zucchini
1/4 cup Egg Beaters
1/2 cup bread crumbs
1/4 cup Parmesan
2 tbsp Parmesan
1 garlic clove, finely chopped
1 tbsp chopped parsley
1 pinch of nutmeg
1 pinch of salt
1 pinch of black pepper

Recipe Directions for Stuffed Zucchini with Mushrooms

  1. Chop mushrooms finely.

  2. Trim off ends of zucchini.

  3. Preheat oven to 400F. Oil a 13x9x2 roasting pan.

  4. Cut zucchini in 1/2, lengthwise. With a small spoon, scoop out and set aside the pulp, leaving a 1/4-inch shell. Arrange the zucchini shells cut-side up on the pan.

  5. Chop the zucchini pulp and place in a bowl with the mushrooms, egg, bread crumbs, cheese, garlic, parsley and nutmeg. Salt and pepper to taste. Spoon the mix into the zucchini shells and sprinkle with the remaining cheese.

  6. Bake for 30 minutes or until zucchini are tender when pieced with a knife and filling is golden.
