1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1 oz Rice, White, Long-grain, Regular, Cooked
0.25 cup Black Beans
2 oz Ground Turkey, 93% Lean
1 oz Beef, Ground, 85% Lean Meat / 15% Fat, Crumbles
1 serving Olives Black Sliced
1/2 cup Petite Cut Diced Tomatoes
0.6 oz Cheddar Cheese
0.5 tsp dry mix Old El Paso Seasoning Mix Taco
1 oz Corn, Sweet, Yellow

Recipe Directions for stuffed yellow peppers

  1. core and stem pepper then roast 10 minutes before stuffing

  2. I made with leftovers so if you're startting from scratch cook rice and beans before layering into pepper. Add a Tblespoon of seasons turkey and beef each into pepper - cover with tomatoes and roast 15-20 min on 350. top with olives and cheese
