Recipe Ingredients for stuffed turkey meatloaf

24 oz Fresh Ground Turkey - Lean
1.5 cup Bread Crumbs
2 large Egg, White
2 tbsp, ground Basil, Dried
1 tbsp Oregano, Ground
1 tbsp Parsley, Dried
2 tbsp Olive Oil
5 clove Garlic
2 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 1/3 small raw Red Onion
0.5 cup, chopped Broccoli
0.5 cup Cauliflower

Recipe Directions for stuffed turkey meatloaf

mix together ground turkey, bread crumbs, eggs, parsley, oregano and basil. divide in two and form 2 rectangles. in a pan, saute garlic and onion in oil. until browned. add pepper, cauliflower and broccoli and cook until vegetables are wilted. spread mix on both rectangles. roll like jelly rolls and seal both ends. place in a shallow pan and bake in 350 degree oven until browned and done, approx 40 minutes (check after 30). serving is a 4oz slice
