tomatoes stuffed with rice and crumb topping

Recipe Ingredients for stuffed tomatoes

8 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
1 cup Peas, Green
3 cup Rice, White, Long-grain, Regular, Cooked
8 tbsp Parmesan, Grated Cheese
4 tbsp chopped Onions
2 cup Soup, Chicken Broth
3 slice Dutch Country 100% Whole Wheat Bread
2 1tsp Olive Oil

Recipe Directions for stuffed tomatoes

  1. Scoop pulp out of tomatoes. Chop pulp, reserving half for future use.

  2. Cook 1 c of rice with 2 c of chicken broth.

  3. add frozen peas, chopped onion, a sprinkle of garlic powder, 1/4 c of parmesan and mix well.

  4. Stuff tomatoes with rice mixture.

  5. Tear bread in small pieces, mix with olive oil, a sprinkle of garlic powder and 1/4 c parmesan. Place crumb topping on tomatoes.

  6. bake uncovered at 350 degrees for 30-35 minutes.
