Recipe Ingredients for stuffed tomatoes

14 tomatoes
2 cups raw rice
4 cloves garlic crushed
1 cup fresh mint leaves
1/4 cup olive oil
6 oz feta cheese

Recipe Directions for stuffed tomatoes

  1. core tomatoes and blenderize the guts,

  2. mix pureed tomatoes with garlic, mint and olive oil, cheese and rice

  3. spoon into tomato shells and use remaining filling around shells in casserole pan

  4. cover with foil and bake at 400 for 60 to 90 minutes.
