Tomatoes stuffed with veggies & low fat cheese

Recipe Ingredients for Stuffed Tomatoes

2 tomatoes
1 cup chopped spinach
2 tbls low fat cottage cheese
1 tbls basil pesto
1/4 cup sliced crimini mushrooms
1/4 cup sliced zucchini
1/4 cup diced onion
1 tbls parmesan cheese

Recipe Directions for Stuffed Tomatoes

Preheat oven to 400. Slice the tops off of the tomatoes. Scoop out the insides, reserving them to be used in the stuffing. Mix chopped spinach, mushrooms & zucchini (plus or in exchange for any other veggies you need to use up) with cottage cheese (ricotta works well, too) and pesto. Add about half of the reserved tomato guts, crushed with your hands. Spoon mixture into hollowed out tomatoes (will be really full). Sprinkle with parmesan. Bake for 30 minutes or until tops begin to brown.
