Tomatoes stuffed with spinach, bread crumbs, parmesan, and spices.

Recipe Ingredients for Stuffed Tomatoes

6 medium tomatoes
1 tablespoon extra-virgin olive oil
1/2 cup bread crumbs
1/2 cup grated Parmesan
1/2 teaspoon crushed red pepper flakes
1 clove garlic, chopped
2 cups spinach

Recipe Directions for Stuffed Tomatoes

  1. Preheat oven to 400 degrees F.

  2. Cut tops off tomatoes and remove the seeds and center with a spoon.

  3. Put olive oil, bread crumbs, parmesan, red pepper flakes, garlic, and spinach in a food processor.

  4. Sprinkle tomatoes with pepper and salt to taste; drizzle with olive oil.

  5. Stuff tomatoes with filling.

  6. Put tomatoes on tray in center of oven; bake for 12 min. Let stand for 5 min before serving.
