Recipe Ingredients for stuffed tomatoes

3/4 cup rice
1/4 cup black bean
6 tomatoes
1 garlic clove, minced
3 tablespoons fresh basil leaves, chopped
3 tablespoons vegetable broth
2 tablespoons fresh Italian parsley, chopped
1/4 cup parmesan cheese, grated

Recipe Directions for stuffed tomatoes

  1. scoop out tomatoes

  2. mix tomato guts and everything but broth together

  3. place in baking dish and fill each tomato with a splash of broth

  4. bake 20 minutes (ish) at 350
