Hollowed out tomato stuffed with a mixture of quinoa, veggies and cheese

Recipe Ingredients for Stuffed Tomato

1 tomato
2 tbsp quinoa
1 cup spinach
1 tbsp red bell pepper
1 oz mozzarella cheese
1 pinch black pepper
1 pinch sea salt
1/2 tsp balsamic vinegar

Recipe Directions for Stuffed Tomato

  1. Hollow out the inside of a tomato and chop up what you take out.

  2. Mix tomato chunks with all ingredients and stuff the tomato.

  3. Sprinkly cheese on top and place on baking sheet.

  4. Bake at 350 degree F for 30-35 minutes.
