Stuffed tomatoes -- adapted from french Tomates farcies

Recipe Ingredients for Stuffed tomato

2 medium potatoes
1/2 lb ground chicken
1 zucchini
1 1/2 tbsp olive oil
6 tomatoes
6 tsp rice
1 cup mozzarella cheese
1 1/2 tbsp herbs

Recipe Directions for Stuffed tomato

  1. Start by washing the tomatoes and then cutting the top of each. It will become le chapeau.

  2. Remove the seeds and scoop out the flesh with a spoon.

  3. Sprinkle with salt and turn them upside down so that the excess water comes out.

  4. Boil potatoes and brown ground chicken.

  5. Cut zucchini into small pieces and fry in 1 tbsp of oil.

  6. Mash potatoes and season with herbs and salt, add to the zucchini.

  7. Place 1 tsp raw rice at the bottom or each tomato.

  8. Place 1 tbsp of ground meat at the bottom, put 1 layer of cheese

  9. Follow with potato and zucchini mixture and top off with cheese

  10. Preheat your oven temperature 300 F

  11. Cover with the cut tomato slice (le chapeau-the hat)

  12. Brush tomatoes with remaining oil season with salt and pepper.

  13. Cook for about 1 hour.
