Delicious and healthy stuffed peppers

Recipe Ingredients for Stuffed Sweet Peppers

2 medium sweet red pepper
1 medium green pepper
15 oz. Black beans
2/3 cup chopped onion
2 oz firm tofu
2/3 cup chopped mushrooms
1 clove garlic
1 medium zucchini
2 tbsp olive oil
2 cups spinach
1 tbsp. chili powder

Recipe Directions for Stuffed Sweet Peppers

  1. Preheat oven to 350 degrees.

  2. Remove the tops of the peppers and remove core. brush with olive oil.

  3. Chop onion, mushrooms, tofu, garlic, zucchini into small pieces.

  4. Empty black beans into pot, cook on low.

  5. Using a little olive oil, brown onions, garlic, zucchini, and mushrooms in a pan. Add to black beans when ready.

  6. With a little balsamic vinegar, cook spinach in pan. Add to black beans.

  7. Add chili powder to black bean mixture. Add a little olive oil as well.

  8. Fill empty peppers with filling.

  9. Lightly brush bottom of glass pan with olive oil, place peppers into pan.

  10. Bake covered for approx. 45 minutes or until ready.
