Mini sweet peppers stuffed w/ground chicken, corn, onion and black beans w/tomato sauce.

Recipe Ingredients for Stuffed Sweet Pepper Casserole Mexicali

454 g Fresh ground chicken
376 g sweet peppers
1/4 c onion, chopped
1/2 tsp chili powder
1/4 tsp pepper
1 1/2 c Summer Crisp Vacuum Pack Golden Sweet Corn
1 1/2 c bush's best black beans
8 oz No Salt Added Tomatoes Sauce

Recipe Directions for Stuffed Sweet Pepper Casserole Mexicali

  1. chop tops off and hollow peppers

  2. Boil peppers in large pot of water for 3-5 minutes.

  3. Brown ground chicken and onions

  4. Add seasonings, beans, corn, and tomato sauce.

  5. Heat until hot and bubbly.

  6. Spoon filling into peppers

  7. Place in casserole dish.

  8. Place extra filling, if any, around stuffed peppers.

  9. Bake stuffed peppers at 350 for 20 minutes.
