Stuffed sweet mini-peppers with Italian seasoned ground turkey

Recipe Ingredients for Stuffed Sweet mini-peppers with Italian seasoned ground turkey

16 ounces ground turkey (Italian seasoned)
1 cup brown rice, cooked
1/2 cup chopped onion
1 1/2 cup chopped fresh mushrooms
1 tsp chopped fresh basil
2 tbsp Eggbeaters
2 tbsp catsup
1 pint mini sweet peppers
8 ounce tomato sauce
1 cup tomato soup, prepared with skim milk

Recipe Directions for Stuffed Sweet mini-peppers with Italian seasoned ground turkey

Prepare rice as directed; set aside. Mix turkey and remaining ingredients except peppers, tomato sauce, and soup. Set aside. Wash peppers, remove stems, and slice lengthwise; remove seeds. Blanch in boiling water 3-4 minutes. Stuff each pepper half with 2 tbsp of turkey mixture. Spray a square baking pan with non-stick cooking spray. Place stuffed peppers in pan. Mix tomato sauce and soup, pour over peppers. Cover with foil and bake in 350 degree preheated oven for 45 minutes. Remove from heat. Sprinkle with fresh grated parmesan cheese if desired. Serves 6.
