Recipe Ingredients for stuffed spaghetti squash

2 cup Squash, Winter, Spaghetti
3 sausage Sausage Hot Italian Style
1 medium (2-1/2" dia) Onions
2 cup, pieces or slices Mushrooms
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1.5 cup Diced Tomatoes, No Salt Added
2 clove Garlic
2 tsp Oregano, Ground
1 cup Cheese

Recipe Directions for stuffed spaghetti squash

  1. cook the squash (cut in half, remove the seed and bake in the microwave - depends on the size for time - usually 15 minutes)

  2. in a non-stick frying pan cook the sausage (remove from casing first) on medium-high heat. make sure to separate the sausage in bite-size pieces. add the chopped onion, mushrooms and pepper - then add the canned tomatoes and simmer for 2 minutes. add the cooked spaghetti squash (to remove the squash use a fork - it looks like spaghetti)

  3. put the mixture back into the squash shell - add cheese and bake in the oven until the cheese is melted
