Delicious, nutritious, low carb. Could also do this with zucchini & mushrooms.

Recipe Ingredients for Stuffed Spaghetti Squash

3 lbs spaghetti squash
1 tbsp olive oil
1 1/4 pounds ground turkey breast
1 red pepper, chopped
1 onion, chopped
2 tomatoes, chopped
3 ounces mozzarella, grated
2 tbsp parmesan, grated
10 olives, chopped
1/2 cup pasta sauce
1 1/2 tsp italian seasoning

Recipe Directions for Stuffed Spaghetti Squash

  1. Cut squash in half, remove seeds and place halves cut side down on a cookie sheet lined with foil. Add about an inch of water and roast spaghetti squash in a 450 degree oven for about 45 minutes.

  2. Meanwhile, heat oil and saute onion and garlic until translucent. Add bell pepper and saute for 2 minutes. Add meat and season with Italian seasoning, pepper and salt.

  3. When meat is no longer pink, add tomatoes, sauce and olives. Continue to cook until tomatoes break down.

  4. Take the squash out of the oven and lower oven temperature to 350.

  5. Taste meat mixture for salt, then spoon it into the squash halves. Sprinkle with cheeses, then bake for and additional 15 - 20 minutes. Serve and enjoy.
