Recipe Ingredients for Stuffed Spaghetti Squash (original)

24 oz Squash, Winter, Spaghetti
0.5 cup, sliced Onions
0.5 cup, chopped Peppers, Sweet, Green
1 clove Garlic
720 grams Tomatoes, Red, Ripe
0.25 cup Parmesan, Grated Cheese

Recipe Directions for Stuffed Spaghetti Squash (original)

  1. Poke holes in the spaghetti squash with fork.

  2. Place in microwave and cook for 18-23 minutes.

  3. Let stand uncovered for 10 minutes.

  4. Meanwhile, cook onion, green pepper and garlic in a sauce pan (medium heat) for about 5 minutes. Stir in tomatoes and spices.

  5. Allow to simmer, stirring occasionally for about 5 minutes.

  6. Finally, cut squash in half (removing seeds and fibers).

  7. Remove strands; toss with cheese and tomato mixture.
