Recipe Ingredients for Stuffed Sourdough French Toast

14 slices Bread, French Or Vienna
5 3/10 ounces evaporated milk
1/2 cup original egg beaters
1 tsp vanilla flavoring
1 tsp ground cinnamon
2 oz fat free cream cheese
1/4 cup low fat cottage cheese
6 tbsp Apricot Sugar Free Preserves
4 tablespoons unsalted butter

Recipe Directions for Stuffed Sourdough French Toast

  1. Dry the bread slightly by toasting very lightly. Or slice the night before and cover only loosely with a towel.

  2. Whip together the milk, egg beaters, vanilla and cinnamon. Place mixture in a shallow bowl.

  3. Combine softened cream cheese with cottage cheese until smooth. Spread on 7 slices of the bread. Spread the other 7 slices with the apricot preserves. Place slices together into a sandwich, and cut in half on a diagonal, making 14 little sandwiches.

  4. Soak the sandwiches in the milk/egg mixture, first on one side, then the other, until they soak up the milk. Do this in batches if necessary.

  5. Meanwhile, heat griddle to medium heat (350). Brush griddle with butter before placing each sandwich on. Cook until golden brown on one side. Lift, brush griddle with butter again, and turn over. These will take a while to reach the proper color at this temperature, which allows the batter that is soaked into the bread to cook thoroughly.

  6. Serve with low calorie syrup, or a dusting of powdered sugar. 1 serving = 2 pieces.
