Lowfat version, recipe does not include the marinara sauce because I use homemade.

Recipe Ingredients for Stuffed Shells

225 grams large pasta shells
10 ounce frozen spinach
125 grams fatfree ricotta
100 grams mozzarella
1 teaspoon basil, dried
1 tablespoon flaxseed meal

Recipe Directions for Stuffed Shells

  1. Mix flaxseed meal with 3 tablespoons water to make egg replacer.

  2. Cook pasta until al dente.

  3. Defrost spinach in microwave and squeeze out excess liquid.

  4. Mix ricotta and mozzarella in bowl with spinach.

  5. Stir in egg replacer and dried basil.

  6. Drain the pasta and stuff the shells.

  7. Arrange in baking dish with some marinara sauce on the bottom.

  8. Add a bit of sauce on the top.

  9. Cover with foil and bake about 35 minutes.

  10. Uncover, sprinkle with a bit of cheese, bake 5 minutes more.

  11. Let stand about 15 minutes.
