Adaptation of Vicky O'Leary's recipe

Recipe Ingredients for Stuffed Shells

1 pound lean ground beef
1 pound ground pork or sage seasoned sausage
20 ounces frozen chopped spinach or 4 cups fresh
2 tsp rosemary
4 garlic cloves
3 eggs, beaten
1 pinch nutmeg
1 pound cooked pasta, jumbo shells
2 tbs flour
1 can beef broth
1/2 cup water
1 cup heavy cream
1 cup grated parmesan cheese
1/2 cup toasted pine nuts

Recipe Directions for Stuffed Shells

  1. Cook spinach according to package directions, drain well. If using fresh just chop, do not cook.

  2. Cook shells, rinse with cold water to keep from sticking.

  3. Brown ground beef and pork with garlic. Transfer to large mixing bowl. Save pan drippings.

  4. Combine meat, spinach, 1/2 cup parmesan cheese, eggs,salt, pepper and nutmeg in bowl. Mix well.

  5. Stuff shells with meat mixture. Place in baking dish.

  6. Make roux with flour and meat drippings. Slowly add beef broth, water and cream to make sauce. When thickened add parmesan cheese. Stir in and pour over stuffed shells.

  7. Top with toasted pine nuts.

  8. Cover and bake at 350 45 minutes - 1 hour or until heated through.
